Adventures in Zucchini Fritters….

Not bad for my first attempt, but they were a little soggy because I forgot to drain the excess water from the zucchini….
Pair them with a sliced mini cucumber and some fat free plain greek yogurt and you got a pretty delicious dinner!!
post 3.5 mile run….

Ok. I know 3.5 is a good distance for having not run in 4 months, but I still feel like I do a shitty job when I have to stop. And I had to stop twice.
At least I went.
Plain greek yogurt & fruit - it’s what’s for….well, 2nd breakfast!

This was a split second decision made at 7:45am while making breakfast/lunch for work. Plain greek yogurt? Check. Strawberries & blueberries? Check & check. I think it worked out pretty well for 2nd breakfast at 10:30am (first breakfast being a bagel thin with a little bit of veggie cream cheese at 8:30am). I think next time I might add a little bit of cinnamon on top. MMMmmm good!
Have I mentioned I eat all the time? I’m talking breakfast between 8 and 9am, 2nd breakfast (or what normal people call snacks) around 10:30 or 11, lunch by 12:30, snack around 4, dinner ranges anywhere from 6:45-9pm (if it’s later throw another snack in there), and it’s a miracle if I don’t eat a snack after dinner. At least most times it’s pretty healthy choices!!
SORE!

Holy crap! Sports conditioning kicked my ass at the gym last night. My shoulders and legs are SORE, but more importantly my BUTT is so sore!! There were crunches, lunges, mountain climbers, skiers, spider pushups, squats, and everything else you could possibly think of! Not to mention there were about 50 people in the class and the room isn’t exactly huge so EVERYONE was sweating their buns off. I was no exception.
I’m glad I’m taking a day off from the gym tonight so hang out with my little brother. I’ve been a workout fiend recently…

Last Saturday - 3 hours of Stand-Up Paddle Boarding

Yesterday - Sports Conditioning
I don’t think my body could take it tonight! But I’m looking forward to Zumba class on Wednesday with my best friend, Jenny. :)
